Small-batch Handcrafted Donuts
As the base for most of our donuts, our standard yeast-raised dough is mixed daily from scratch in an old school 30-quart Hobart mixer. After that it goes into the refrigerator to proof overnight, activating a fermentation process that takes up to 14 hours. This process gives it a more substantial bite and savory flavor, that we think nicely balances the sweetness of the toppings. Early each morning, our talented pastry chefs roll out this dough and hand cut hundreds of fresh donuts while you sleep, frying and topping them with our homemade frostings and glazes. We are also pleased to offer a couple of vegan or gluten-free flavors daily, available in limited quantities only. (Please see our allergen note below if you have dietary sensitivities).
We've partnered with Metric Coffee from Chicago's West Fulton Market to bring you some amazing hot and cold drink options. They are a small-batch artisan coffee producer, and the care they take in sourcing and roasting their beans really shine through in the final product. Some of our offerings are their Organic Fulton St. Blend, Binary espresso, seasonal Single Origin drip coffees and their Hellion Nitro Cold Brew on tap. Our baristas are ready to artfully prepare your coffee just the way you like it.
We proudly source all of our hot and cold teas from Numi Organic Teas. For a chilly day we have 6 yummy varieties of hot tea ready to warm your spirit. Or come try our High Mountain Black Tea or Citrus Green Tea over ice when you're in the mood for something more refreshing.
All of our whole and skim milk is sourced from a local dairy producer, Kilgus Farmstead based in Fairbury, Illinois. Their non-homogenized milk comes from pastured cows, and makes especially creamy lattes and frothy cappuccinos.
We also carry oat milk and soy milk for those avoiding dairy.
IMPORTANT NOTE: Our restaurant uses and produces items that include gluten, dairy products and nuts, and we cannot ensure that cross-contamination will never occur. We have processes in place to minimize that happening, but there is inherently some flour in the air and possibly on some of our work surfaces. Additionally, all of our donuts must be prepared in the same fryer. If you are Celiac and/or highly sensitive to dairy products or nuts, please advise the person taking your order.
