Menu Development

How many donuts do you think you normally eat in a week?  2?  4?

We've probably gotten up to about 15 donuts each, a few times.  Donut. Comas. Happening. 

Yep, the joys and sorrows of taste testing are many.  Over the past few months we have made countless batches of donut dough, testing variations in ingredients, toppings and cooking methods.  We have to eat at least part of each donut variation in order to form an opinion about it, right?  So we have stuffed ourselves silly on donuts more times than I care to admit. 

Our neighbors have enjoyed this testing process thoroughly, getting to try many versions of our tasty treats only minutes after they were completed.  Variations in dough recipes, glaze flavors, frosting, fillings, crumbles, drizzles, sprinkles ... Sweet, savory, spicy, crunchy, smooth... Different oils, frying temperatures, cooking times... Bacon topped, nut topped, nut -free, vegan, gluten-free, yeast-raised, cake ... the list of options goes on and on.

While we have a pretty good idea of what will be on the initial menu at this point, we also plan to conduct a taste panel soon, where we bring in local folks who haven't yet tried our donuts to sample all of the potential options and provide honest feedback on them. August update - lots happening!

We are excited to share that the building renovation is finally underway for our new storefront at 124 W. Main in West Dundee. The construction crews have begun demolition, and are working this week on exposing some of the original brickwork, uncovering previously closed up windows, taking down walls, and getting everything ready for the next phase. We couldn't be happier to finally see this happening! Pictures included below.

Since our last post, we've been busy bees! Just a small portion of the things we've been working on over the last month: shopping for potential furniture and décor options, creating music playlists, finalizing equipment needs, pricing out food and paper suppliers, finding and talking to future management candidates, comparing technology vendors, and detailing the plans for plumbing, electrical and lighting.

As we continue our most delicious work - menu development - we are tasting and refining some awesome (and sadly, some not so awesome) donut flavor combinations. Who knew narrowing down a core menu was so hard? Seasonal ingredients, locally sourced options, dietary needs, unique flavors... lots to consider here. We continually review our portioning and pricing plan as we go along, to make sure we can always provide an excellent value to our guests. We also recently had a visit with our coffee roaster, where we did a cupping session to start choosing our bean blends, and got some bonus tips on latte art too.

Storefront location in the works!

We are happy to finally give you an update on what's been happening with CRAFT!

This week we presented a proposal to the Board Members of the Village of West Dundee, and gained their support to move forward with our concept there. We look forward to beginning demo and construction soon at 124 W. Main St, right in the heart of West Dundee near the Fox River.

Over the past few weeks, we've been busy reviewing plans and agreements with our architect and the building owner, in order to lock in this great retail space.  We will be located on the main floor of the building, which originally dates back to 1900. It already has a lot of historic character built in, which we hope to enhance with our improvements. It feels like a great location and aesthetic fit for our concept, and we can't wait for you to see what we have planned for it. Cross your fingers for all to stay on schedule for an opening in the fall!
